My daughter loves lemonade. Loves it! She feels the same about lemonade as I do about Diet Mt. Dew. So when I made Jalapeno Lemonade for my jalapeno challenge, I asked if she wanted to try it.
Being a good mom, I removed the sliced jalapeno from the glass rim. It was there purely for show and I didn’t want her to accidentally eat it.
Being a bad mom, I didn’t rotate the glass, so she sipped from the same spot, burning her tongue.
She still likes lemonade, just not this kind.
(Don’t let that story scare you. This has a mild, refreshing flavor. You smell the jalapeno pepper more than you taste it.)
- 1 jalapeno, chopped
- 1 cup sugar
- 1 cup water
- 1/2 cup fresh lemon juice
- 6 cups cold water
In a sauce pan over medium high heat, combine the sugar, water and jalapeno. If you want your drink to be less spicy, remove the seeds from the pepper.
Heat the mixture and stir to dissolve the sugar. Bring to a rolling boil then remove from heat and let cool for a few minutes.
Strain the mixture through a fine mesh strainer to remove the jalapeno chunks and seeds.
Combine the sugar mixture, lemon juice and water in a large pitcher. Chill for at least 1 hour.
