I have decided that the child inside of me is a perpetual 10-year-old because I insist on bringing treats to work when it’s my birthday.
None of colleagues have ever complained.
I hade a plan to make three different kinds of cupcakes to bring to work on Monday, but a day of doing whatever I want on Sunday (my actual birthday) led to me having the desire to make just one kind of cupcake. But it was the right kind.
Death by Oreo cupcakes.
Thanks to my latest obsession — Pinterest — for the inspiration. My family says thanks, too, because it is never a bad day when there are Oreo cookies in the house.
- 1 package Oreo cookies
- 1 package chocolate cake mix (make according to the instructions on the box)
- 8 ounces cream cheese, at room temperature
- 1 stick butter, at room temperature
- 3 3/4 cups powdered sugar
- 1 tsp vanilla
Preheat oven to 350 degrees. Mix packaged cake mix according to directions, but do not bake.
Line cupcake tins with liner, place a regular size Oreo cookie in the bottom of each liner. Take 1/2 of remaining cookies and chop coarsely and add to cake mix. Fill the cupcake tins. Bake for 15 minutes, or according to box directions. While cupcakes are baking make the frosting.
Cream together butter and cream cheese. Add vanilla, then add powdered sugar slowly until blended well. Chop remaining regular-sized Oreos very fine, or put them in the food processor. Add Oreo crumbs to the frosting. Frost after cupcakes have cooled.
