Meat and Potatoes

For April’s Fools Day last year, I made my kids meatloaf and mashed potato cupcakes. The meatloaf was the cupcake, the mashed potatoes the frosting. The joke was that they thought they were eating cupcakes for dinner — SURPRISE!

They didn’t think it was funny.

I made meatloaf for dinner last night. I changed things up a bit, frying some bacon and then chopping it into small pieces and adding it to my mixture. I think it was a good call since last night was the first time my son actually ate meatloaf without gagging.

MEATLOAF

  • 1 – 11/2 lb ground beef
  • 1/2 cup oatmeal
  • 1 egg
  • 1/2 cup milk
  • 1 tsp fresh garlic
  • 1 tsp Worcestershire
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp thyme
  • 1/2 tsp garlic powder
  • 3 slices if bacon, cooked and chopped into bite-sized pieces
  • Ketchup

Preheat oven to 350 degrees.

Combine all ingredients into a bowl, except ketchup. Shaped into a loaf and place in a prepared baking dish. (I like to use a 9-13 cake pan covered in foil and sprayed with cooking spray to prevent sticking.)

Bake for one hour. Remove and spread ketchup over the meatloaf. Return to oven for another 10 to 15 minutes. Make sure it is cooked through before serving.
